Basic roasted pecans

4 cups pecan halves

4 tablespoons butter, melted

1 tablespoon salt

Preheat the oven to 275 degrees. Spread the pecans evenly in one layer on a heaving baking sheet. Pour the butter over the pecans, stirring to coat evenly. Roast for about 45 minutes, stirring at 15-minute intervals, until desired degree of toastiness is reached. When done, remove from the oven and sprinkle the salt while the pecans are still warm. Cool completely before storing in airtight containers.

Variations:

This is where you can be creative and experiment with various combinations of spices, oils and condiments. Use these in place of or in addition to the salt in the basic roasted pecan recipe.

• 1 teaspoon each of chili powder, onion salt and cayenne pepper.

• 1 teaspoon each of soy sauce, garlic powder and ground ginger.

• 1 teaspoon each of sesame oil, Chinese five-spice powder and soy sauce.

• 1 teaspoon each of Worcestershire sauce, onion powder and celery salt.
